ABOUT SONIA: In a country as diverse as India, Sonia grew up in the vibrant and cuisine rich culture of the Northern part of the country. The true art of the Indian hospitality is the home cuisine, hidden in its simplicity of freshness. This is the basis of all the learning Sonia has seen firsthand in her grandmother's and mother's kitchen back in India. Cooking, she was taught, is a craft, fresh ingredients and slow methodology, the tools. Vegetables come into life in a mélange, studded with secret spices and finished with the sprinkling of finely chopped herbs. Meats call out their siren song in rich gravies that beg for an accompaniment of rice or a naan. Lentils are the comfort food, bringing complex proteins to the plate in a way like no other. When one bites into a spoonful of chicken curry mixed in with a little rice, there is an explosion of flavors that come into being all at once.
Life led Sonia to make Orange County her home, with her husband, Nitesh, her muse. Hostessing and entertaining at this young couple's home found Sonia being inundated with friends requesting for party orders for platters of freshly made Indian delicacies simply not found in the restaurants. It is probably because all of her spices are ground fresh each day, her sauces prepared just before or that all the lentils are not from a can. A trip to the market each time she gets a party order ensures everything served is as fresh each time. Encouraged by her husband, Sonia has been the go to caterer for friends and friends of friends, her business growing solely through referrals. With an earlier degree in Fashion and Merchandising/Design, Sonia has finally answered her true calling as a chef and is now pursuing her secondary degree in Culinary Arts at the Orange Coast College.
